Perfect Idli-Dosa Batter– One Batter, Many Wonders!

🥣 Ingredients for Batter:
1 cup urad dal
3 cups idli rice (or parboiled rice)
Water for soaking and grinding
Salt to taste

🕒 Soaking & Grinding:
1. Wash and soak urad dal and rice separately for at least 6–7 hours or overnight.
2. First grind the urad dal into a smooth, fluffy paste.
3. Then grind the rice to a slightly coarse paste.
4. Mix both batters in a large bowl. Add salt.
5. Cover and let it ferment for 10–12 hours (overnight in warm weather).

🍽 How to Make Soft Idli:
1. Grease the idli moulds.
2. Pour fermented batter up to ¾th level.
3. Steam for 12–15 minutes on medium flame.
4. Let it cool slightly before demoulding.

🌯 For Crispy Dosa:
1. Add a little water to batter to adjust dosa consistency.
2. Heat a non-stick tawa, spread a ladle of batter thinly.
3. Drizzle oil or ghee on sides.
4. Cook till golden and crisp, fold and serve!

🧁 Instant Idada (No Ferment Gujarati-style):
1. Take the same batter.
2. Add a pinch of ENO or fruit salt.
3. Grease a plate or mould.
4. Pour batter and steam for 10–12 minutes.
5. Cut and serve with chutney!
